Ok I love junk food but with my severe food allergies I rarely find anything I really long for.  I am trying to get healthier but I confess I don't like most veggies.  Broccoli is ok cooked with lots of cheese sauce on it.  My oldest has gone Paleo and I found a few recipes they've sprung on me that I actually liked.  Oh I don't care much for fish either.  This cook book is by Loren  Cordain.  It's titled "Real Paleo Fast and Easy".  ISBN 9780544582644

I hate Brussel Sprouts but my husband loves them so in an attempt to please him and try something new I made Shaved Sprouts and Chicken Salad from this book.  I also hate musard of any kind.   I cut the recipe in half for the two of us but here is today's recipe which has me wanting Brussel Sprouts again later this week!

Shaved Sprouts and Chicken Salad       Serves 4

1/3 cup extra virgin olive oil
3 to 4 Tablespoons fresh Lemon Juice
1 1/2 to 2 teaspoons Dijon Style Mustard

Mix this together in a large bowl.

Add 9 ounces shaved fresh Brussel Sprouts (shaved is thinly sliced,I used a mandolin slicer but a knife would work fine as would a food processor if you cut the bottoms off.) and 1/2 cup snipped fresh mint.  

Mix and add 2 cups shredded roast chicken (recipe is in the book), 1 cup halved seedless red grapes, 1 sweet tart apple such as Pink Lady, cored and diced and 1 cup chopped pecans.  Toss together and enjoy.
